Catherine
We've seen a lot of lace over the years, and have become quite good at recreating it in frosting. That's why it was unsettling when I went to take pictures of Catherine's beautiful dress, but couldn't categorize the lace. We have our tricks for Alencon and Chantilly, even Belgian lace and overembroidered tulle have distinct techniqes for recreating them out of sugar, but this lace was different. It wasn't until I had about ten percent of the bottom tier piped with Royal Icing brush embroidery that I realized it wasn't doing her dress justice. So we scraped off the Royal, tossed around a few ideas, decided that all four of us cake ladies were right, and used all four techniques to create the necessary layers that would replicate this unique lace.
